Jerk Chicken with Mango Salsa Recipe šŸ„­šŸ—ā£

A delightful summer dinner! It is always a treat when you can accompany your protein with a fruit like mango or pineapple salsa. Luckily mango salsa is THE BOMB with jerk chicken. So let's spice it up!

Mango Salsa


Ingredients

  • 1 large mango, peeled and diced⁣

  • ¼ cup red onion, diced⁣

  • 1 jalapeƱo pepper, seeded and diced⁣

  • 2 tbsp lime juice⁣

  • 2 tsp granulated sugar⁣

  • 1 tsp olive oil⁣

  • ¼ tsp ground cumin⁣

  • ¼ tsp salt⁣

Directions

  1. Combine all ingredients in a bowl. Mix well and refrigerate for at least 30 mins⁣

Jerk Chicken Marinade


Ingredients

  • 12 chicken thighs, boneless and skinless (~2.5 lbs)⁣

  • 1/3 cup green onions, chopped⁣

  • ¼ cup lime juice⁣

  • 2 tbsp olive oil⁣

  • 2 tbsp low sodium soya sauce⁣

  • 2 tbsp honey⁣

  • 1 tbsp ginger-root, grated⁣

  • 2 tbsp garlic, minced⁣

  • 2 jalapeƱo peppers, seeded and minced⁣

  • 2 tsp all spice⁣

  • 1 tsp thyme⁣

  • 1 tsp salt⁣

  • 1 tsp pepper⁣

  • ½ tsp cinnamon⁣

  • ½ tsp nutmeg⁣

Directions

  1. In a medium bowl, whisk together all marinade ingredients. Combine marinade with chicken thighs in a freezer bag and leave in the fridge overnight. ⁣

  2. Preheat your grill to medium heat and light brush rack with oil. Grill for approx. 15 min or until the chicken is no longer pink in the center. ⁣

  3. Serve chicken with mango salsa⁣
